No fixed list: what is open tonight depends on what arrived this week. Growers from the South of France, detours through the Loire, the Jura and Burgundy, and always plenty of bottles worth talking about.
The rest is simple: good olive oil, good bread, local produce, wooden tables set on the cobblestones and a facade you can spot from far away.
